Quick N Easy Applesauce Pancakes [Vegan - no-oil]

These apple/spice pancakes are sure to be
a huge hit with the family!

These are the lightest pancakes I've ever made! Usually, I walk away from a pancake breakfast feeling like I need a nap, these leave me feeling light and energetic -- perfect!

Recipe Applesauce Pancakes:


Makes about 4-6 pancakes. Double or triple as needed.

2/3 cup flour
1/4 teaspoon salt
2 tsp baking powder
1/2 tsp cinnamon
1/8 tsp nutmeg (optional)
2/3 cup + 1 Tbsp soy milk
1/2 cup applesauce

Whisk dry ingredients, then stir in soy milk and applesauce until mixed.

Spoon pancakes into preheated fry pan or griddle (medium heat).
Cook about 2-3 minutes per side until golden brown. Serve warm with your favorite syrup.
