Crisp Potato Pancakes on a bed of shredded lettuce with a salsa verde topping |
Recipe Potato Pancakes (Vegan No Oil)
These potato pancakes come out beautifully with no oil added - crisp on the outside and tender on the inside. Serve (as shown) on a bed of shredded lettuce with tomato slices and a nice Verde sauce, or choose your own favorite topping.Shopping / Ingredient List:
3 Medium Potatoes
All Purpose Flour
Salt
Cayenne or Black Pepper
Garlic Powder
1 Small Onion
Preheat oven to 500 degrees.
Place baking sheet in oven to preheat
Potato Pancakes Recipe:
Grate into a large mixing bowl (by hand or in a food processor) three medium potatoes.Add 1/2 cup finely chopped onion.
Stir together with:
3 heaping Tbsp Flour
1/2 tsp Salt
1/8 tsp Cayenne or Black Pepper (optional)
1/4 tsp Garlic Powder
1/2 tsp Baking Powder
Pull baking sheet from oven and lightly spray with cooking spray (unless pan is non-stick bakeware).
With a large serving spoon, place 5 or 6 spoonfuls of potato mix on baking sheet and flatten the tops.
Place pan back in oven to cook for 8 minutes.
Flip pancakes over, place back in oven for 6 minutes.
Turn oven to Broil and cook for an additional 2-4 minutes until pancakes are nice and brown, remove from oven.
Serve hot.
