In keeping with this month's theme of "What do I do with all of these Blackberries?"...we bring you...

Fluffy and moist - I can't say they're calorie-free, but they're probably a heck of a lot better for you than traditional pancakes! Serve hot with some of that Blackberry Syrup you made!

Wild Blackberry Pancakes (Oil Free) Recipe

Ingredients:

1 cup all-purpose flour
1 cup whole wheat flour
1/2 tsp salt
2 tsp baking powder
2 tsp agave or sugar
2 ripe bananas
2 cups soy, almond, or rice milk
1 cup fresh blackberries

Preparation:
Pre-heat pan or griddle to med/high
In a medium bowl, mix:
1 cup all-purpose flour
1 cup whole wheat flour
1/2 tsp salt
2 tsp baking powder
In a separate bowl, cut up (smoosh) 2 ripe bananas, set aside
Mix together with dry ingredients:
Bananas
2 Tablespoons Agave Nectar or Sugar (your choice)
2 cups almond, rice, or soy milk
Lastly, add 1 cup fresh blackberries & lightly stir in to mix.
Pour mix onto preheated griddle, turn at the first sign of bubbles (the vegan version doesn't bubble as much as traditional mixes will)
Makes 8-10 medium pancakes.
