Vegan Breakfast Tacos

Make up a batch of our Oil Free (No Really!) Tortillas to hold a wonderful mix of potatoes, Soyrizo Chorizo, Fresh Avocado, and Home-made Salsa for delicious breakfast tacos that even your die-hard omnivore friends will love!

Vegan Breakfast Tacos
(serves 3-4)

Make up a batch of Oil Free (No Really!) Tortillas, cut into 6 pieces and roll into small tortillas. Cook 45 seconds on each side (you'll want them soft), then set aside under a towel to keep warm.


Microwave 4-5 small to medium potatoes for 6-7 minutes on high. Cut into 3/4 inch cubes.

Chop 1 medium onion. Cook with potatoes in non-stick fry pan with 1 tsp garlic powder, 1 tsp chili powder, and 1/2 tsp salt until onions are browned.

Add 1/2 package Soyrizo, heat through.

Chop/mush one ripe avocado and mix with a little salt and lime juice, set aside.

Fill tortillas with potato and Soyrizo mixture, top with guacamole and Home-made Salsa.
