No-bake Apple Crisp Pie [Vegan]
A super-easy, super-quick recipe that goes from start to serve in less than a half-hour! The reason I call it an Apple Crisp Pie is that it's much more crisp than pie when served (it has a hard time holding the pie shape), but your guests will forgive you the sloppy appearance after the first bite - believe me!

For this recipe, I used my tiny 1000 watt microwave, and a 9 inch pyrex pie plate. I crushed about 2 sleeves of Annie's Homegrown Organic Graham crackers and peeled and chopped 6 medium-sized apples (5 granny smith and 1 super-sweet pink lady).




Ingredients / Shopping List

6 medium apples (whatever you have on-hand is fine)
Graham Crackers
Sugar
Margarine
Ground Cinnamon
Ground Nutmeg
Salt
Shelled Walnuts or Pecans

The Crust:

Cut a 1/2 cup stick of margarine in half and melt in separate containers. Reserve half of the margarine for the filling.

Crush 2 and 1/2 cups graham crackers by placing the crackers in a zip bag and rolling over them with a rolling pin. Measure to be sure you have 2.5 cups, then pour into a medium-sized mixing bowl.

Mix graham crumbs with 1/4 cup melted margarine and 1/4 cup sugar (sugar is optional if you're using sweet apples).

Take 1/3 of this mix and set aside to use as topping.

Pat the remaining graham cracker mix into a pie shell in a microwave safe 8 or 9 inch pie pan. Be sure to press the crumb mixture up the sides of the pie pan. Crust will be thin - that's fine.

The Filling:

Peel and cut 6 medium apples (bite-size, not too thick) and place into medium-sized mixing bowl.

Mix with:
1/4 cup melted margarine
1/4 cup sugar (omit or reduce if using sweet apples)
1 teaspoon Cinnamon
1/4 teaspoon Salt
1/4 teaspoon Nutmeg
1/2 cup chopped Pecans or Walnuts.

Crispy, Creamy Apple Delight!
Pour mix into your prepared graham cracker crust, pat the ingredients down with your hands or a spatula, then top with the reserved graham cracker crust mix.

Microwave on high for 15-17 minutes, until apples are cooked-through. Let cool for at least 5 minutes before serving.

As you can see from the photo, it's far from a pretty pie - but just wait until you taste it!
