Sourdough Biscuits Recipe (Vegan)

Light and flaky, you would never guess that these sourdough biscuits were vegan. Top it with a little white gravy (see below) and you've got a comfort food feast!

Flaky fresh sourdough biscuits
Shopping / Ingredient List
All Purpose or Bread Flour
Salt
Baking Powder
Margarine (I use Smart Balance)
Sourdough Starter (remember to bring it to room temp before using)

Before mixing or measuring anything, place 1/3 cup margarine in the freezer to keep it good and cold. This will insure flakier biscuits.

Preheat oven to 425 degrees

Recipe for Vegan Sourdough Biscuits

In a medium mixing bowl, stir together dry ingredients:
1 cup flour
1/4 tsp salt
1/2 tsp baking powder
Cut in 1/3 cup margarine using two knives or a pastry cutter (do this quickly, don't let the margarine melt!)
Pour in 1 cup Sourdough Starter and stir lightly - just until everything is mixed

Turn dough onto lightly floured counter and pat into 3/4 inch thick disc.
With a biscuit cutter or drinking glass, cut out biscuits (6-8) and place on cookie sheet.
Put into preheated oven and cook for 15 minutes.

Serve warm


Recipe for Vegan White Gravy

In a small saucepan, melt 2 Tablespoons margarine, then add
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
1 Tablespoon fresh parsley or cilantro
2 Tablespoons flour
Stir constantly to keep roux (flour mix) smooth as you slowly add up to
1 cup of unflavored soy milk

Remove from heat when you get the consistency you prefer.
