Recipe Vegan Chorizo and Potatoes

This spicy dish makes a wonderful addition to any vegan brunch! With a rich, spicy mix of soy chorizo, oven-fried potatoes, onions and jalapeno peppers - you'll think you're in Mexican cuisine heaven!

Note: I buy Cacique-brand Soy Chorizo at my local Safeway store for about $1.49 for a 10 ounce package and it tastes much better than the more expensive brands. Be sure to look around your grocery store, because many of them simply don't know where to put the stuff! I found this in the cheese section.
Shopping List / Ingredients:

1/2 package Soy Chorizo
2 large potatoes
1 large onion
2 fresh jalapenos (or your choice of pepper)

Vegan Chorizo & Potatoes Recipe:

Pre-heat oven to 450 degrees.

Cut potatoes, onion, and peppers into bite-sized pieces.

Place on cookie sheet (spray with canola oil, or use non-stick ovenware)

Cook for 27-30 minutes

Pre-heat large fry pan or wok on medium-low

Toss 1/2 package Soy Chorizo and all of the cooked vegetables together until soy chorizo is heated through and covers all the vegetables. Serve warm.
