Sweet Wheat Sandwich Bread (No knead, No oil)


This wheat bread is SO soft and flavorful that the kids -- husbands, too! ;-) -- won't give you any grief about eating a "healthy" bread. The dough will be a bit slack, so sprinkle plenty of flour and spray your pans.

Sweet Wheat Sandwich Bread
(Makes 3 small or 2 large loaves)

Preheat oven to 350 degrees.

In a bowl, or your Bread Box if you plan to save some of the dough for later, add...
3 cups warm (not hot) water
1 1/2 Tbsp Active Yeast
1 Tbsp Coarse Sea Salt
3 Tbsp Agave Nectar (vegan) or 1/4 Cup Honey (not a vegan ingredient)
4 cups Bread Flour
2 cups Whole Wheat Flour

Mix together just until all ingredients are incorporated. (This is a no-knead recipe, so less is more)

Let dough rise for 2-3 hours (should at least double in size)

Liberally flour your work surface as the dough will be slack.
Divide loaves into 2 or 3 parts depending on the size of your loaf pans.
Shape dough into loaves and place in pans.
Let rise for 25-30 minutes.

Place in 350 degree oven for 35 minutes (small loaf) or 42 minutes (large loaf).

If you prefer the rustic - or artisan - style loaf, simply create a round or oval with your dough and place it on a baking sheet. Cook in a 450 degree oven for 25 minutes.

Let cool for at least 30 minutes before slicing as this is a *very* soft loaf of bread!

Note: This dough would also make AWESOME dinner rolls! Simply roll the dough into golf ball size and place on a baking sheet. Bake at 450 for 8-10 minutes.
