Dark & Rich No-Knead Pumpernickel Bread





Make this dough in about five minutes and you'll have some of the richest bread you've ever tasted - and it is SO healthy for your family. According to Dr. Neal Barnard, Since pumpernickel bread has a much lower G.I. than white or wheat bread, it doesn't spike your blood sugar - and it makes for a mean Tomato, Lettuce, and Cucumber sandwich! And it's sure to calm that chocolate craving you've been having!

Dark & Rich No-Knead Pumpernickel Bread

3 cups water (warm to the touch - not hot!)
1½ Tablespoons Active Dry Yeast
1 Tablespoon Sea Salt (Coarse)
2 teaspoons instant coffee
2 Tablespoons Hershey's Extra Dark Cocoa
2 Tablespoons Molasses
1 Tablespoon Caraway Seeds
1 cup Rye Flour
5 cups Bread Flour

Mix everything together in a bowl and let it rise for 2-3 hours.

Separate dough into two loaves and place on non-stick or lightly sprayed baking sheet.

Cook in pre-heated 450 degree oven for 25 minutes.

Cool before cutting.

This bread freezes VERY well and tastes fresh out of the oven when defrosted.

If you'd like to make the bread later, or save some for pizza or dinner rolls, simply place it in a covered container in the fridge after you've let it rise. It will keep for 5-7 days.

  1. Can it be made entirely with Whole Grain Flour? Could you use a whole Wheat instead of Bread Flour?

    1. Absolutely! Of course using whole grain wheat will change the texture, but different can be good.:-) Let us know how it goes.
