EZ Vegan Sherbet (Or Sorbet)

Remember those wonderful summer days as a kid, when you could talk your Mom into buying strawberry sherbet (I called it "sherbert") as a cool treat? These days, you don't dare buy it for your own children as they've crammed it full of fillers, gums and high fructose corn syrup... ick!

No worries, it's so easy to make on your own, it will quickly become a mainstay for your family. AND, since it consists mainly of fruit - it is diet friendly! (yay!)


Recipe Strawberry / Banana Sherbet (Vegan)


In your food processor, pulse 2 frozen bananas*, 3 cups frozen strawberries (whole)** and 2 Tbsps agave nectar.

It will take a minute or two of pulsing and scraping fruit off the sides to get the frozen fruit chopped sufficiently to begin to smooth out.

Once it begins to smooth out, add 1/4 cup soy milk for Sherbet or 1/4 cup apple juice or water for Sorbet. Let it mix in the food processor for 1-2 minutes until it reaches the desired consistency. Serve immediately or freeze for later.***

*Keep a few bananas (peeled and cut into 1 inch pieces) in the freezer for use in deserts, smoothies, etc.

**Want to change things up a bit? Try frozen blueberries, mango, or your favorite frozen fruit in place of the strawberries.

***If you're planning on keeping this in the freezer for several days, you might want to add a teaspoon of vodka when mixing to keep it from freezing too hard.
