Recipe for Oatmeal Everything Cookies (No Oil)

These cookies will convince the most hard-core carnivore that there is a definite upside to going vegan! But they DO come with a warning - since we're swapping out butter/margarine and using prune paste instead... well...let's just say you won't need that cleansing tea after all if you eat too many at once! :-D

These cookies get Five Stars, Thumbs Up, and PLEASE may we have more from the husband and daughter - in fact, Jim has replaced his Power Bar with a couple of cookies for his long bike rides and says it works even better!!

Oatmeal Everything Cookies

In a large mixing bowl, combine:
1/2 cup Prune Puree (see below)
3/4 cup packed brown sugar
1/2 cup soy milk (or use almond or coconut milk to add those flavors)
1 tsp vanilla
2 Tbsp corn starch

Mix well

Add in:
2 cups flour (use whole wheat if you want to add fiber)
1 tsp baking soda
2 tsp ground cinnamon
1/2 tsp sea salt
2 1/2 cups old-fashioned oats
1/2 cup raisins
1/2 cup craisins
1/2 cup "Enjoy Life" vegan chocolate chips
1 med/lg apple diced

Mix together with a spoon. Mixture will be sticky.

Use a good-sized tablespoon to place cookies on a non-stick cookie sheet, or one that has been lined with parchment paper. (This is IMPORTANT! Cookies will stick to pan because there is no butter or oil!)

Cook at 350 degrees for 11-12 minutes.

******If you'd prefer bars, simply spread the cookie dough into a non-stick pan about 1/2 inch thick and bake at 350 for 13-15 minutes*****

Makes 4-5 dozen cookies. They freeze well, so you'll always have some on-hand.

Prune Puree:
1 1/3 cup prunes
6 Tbsp hot water
Process in blender or food processor until smooth. Will keep in refrigerator for 4-6 weeks
