Recipe for Soft and Yummy Wheat Tortillas

An important part of our vegan diet is beans. Black Beans, Pinto Beans - whatever you choose - they are chock-full of protein and more than a few of the needed vitamins and minerals, and there is just NO better way to eat them than wrapped up in a warm, chewy, home-made tortilla with fresh toppings like lettuce, tomatoes, salsa.... ahhhhh. ;-)

Vegan Wheat Tortillas

1 1/2 cup white flour
1/2 cup wheat flour (you can adjust this mix to suit your taste)
1/2 tsp salt
1/2 tsp baking soda
3 Tbsp canola oil
3/4 cup warm water

In a mixing bowl, mix the dry ingredients well.
Add 3 Tablespoons canola oil and 3/4 cup warm (not hot!) water.
Knead dough on the counter/table until smooth
Place dough back in the bowl, cover with a towel and let stand for 30mins to 1 hour. (This is a VERY important step -- do not skip it, or your tortillas will be dry!)

After allowing the dough to rest, start your comal, griddle, or frying pan heating up to medium-high.
Cut the dough into 6 equal pieces and roll each into a ball.
With a rolling pin, roll out the dough balls into a 6-9 inch tortilla.
Place in the pan (no spray is required) for a few moments on each side. (it doesn't take long, so watch 'em!)
Set the finished tortillas in a Tortilla Warmer, or simply place on a plate with a towel to keep them warm and soft.

Serve with beans, veggies, or fajitas made with some veggie chicken strips!
